Crispy Duck Pizza with Hoisin sauce

An Asian twist on a classic Margarita pizza base.
Ingredients
  • Duck Brest (Skin On)
  • Spring Onions
  • Hoisin Sauce
  • Tomoto Pizza Sauce
  • Pizza dough
  • Mozzarella Cheese
  • Semolina
Instructions
  1. First take the Duck out of the fridge for 20 mins so it has chance to come up to room temperature. If the breast is slightly damp pat it down with kitchen roll.
  2. We need to pan fry our duck - you'll need a cast iron pan or a decent no stick pan for this. Heat up the pan on high for a few minutes so its really hot then place the duck SKIN side down in the pan. You don't need to add any oil as the duck skin will render out a lot of fat.
  3. Leave the duck cooking on the skin side for 5 mins, then turn over and cook for a further 3 mins. You can pour off any excess fat at this stage if your pan is spitting fat everywhere!
  4. Take your duck out of the pan and set this aside covered in tin foil so the duck can rest.
  5. Scatter some Semolina on to the work surface where you plan to roll out your dough. Follow the link if you need a dough recipe.
  6. Roll out your dough to create your pizza base - it should be stretchy so you can form it into a 10" base
  7. Top your pizza base with the Tomato Pizza Sauce. Spread out from the middle of the base leaving about 1" (2cm) sauce free at the edge. Follow the link if you need a sauce recipe.
  8. Sprinkle a hand full of cheese over the top keeping the cheese on top of the pizza sauce.
  9. Now remove the duck skin from the duck breast and set this aside on kitchen roll.
  10. Slice your duck in to ¼" (1/2cm) pieces - don't worry of the duck looks rare as it will finish cooking in the oven.
  11. Now sprinkle your pizza peel with Semolina and slide the pizza on to the peel.
  12. WOOD OVEN - Make sure your oven is up to temperature 350 degrees - the pizza should take about 2 mins to cook - don't forget to turn a couple of time for an even cooked crust
  13. TRADITIONAL OVEN - make sure your pizza stone has had chance to come up to temperature in the oven. It should be set to 250 degrees for at least 10 mins before putting the pizza in. It will then take about 8-10 mins to cook - don't forget to turn.
  14. While the pizza is cooking wash and slice your spring onions
  15. In the pan we used to cook our duck just wipe this out with kitchen roll and heat up again on high. Place the duck skin in the pan for about 3 mins so it becomes really crispy.
  16. When cooked remove the pizza from the oven and then sprinkle over the spring onion
  17. Dribble some hoisin sauce over the pizza
  18. Use some scissors to cut shards of duck skin over the pizza
  19. Slice and serve!
